Celebrate Soy
Soybeans are one of the most beautiful foods the earth has to offer. Not so much based on appearance, though the brilliant green is refreshing, indeed, but on their contribution toward individual and global health.
Soybeans and soy products contain phytonutrients that promote heart health.
Soy protein and isoflavones are well-known for their ability to help lower total cholesterol and LDLs.
In fact, research indicates that 25 grams of soy protein per day can help reduce the risk of heart disease.
Soybeans also reduce the risk for cancer.
The Best Sources of Soy
Soy foods include soybeans, tofu, soymilk, tempeh and the isolated soy protein that is added to other foods
or used in the preparation of baked goods. Good sources of soy protein include soy nuts, soy flour, energy bars,
tofu, tempeh and soy milk.
PASTA WITH SOYBEANS
Begin cooking pasta according to package directions. When there is just 5 minutes of cooking time left,
throw in a package of frozen soybeans (out of the pods) into the boiling water.
When time is up, use a colander to drain the pasta and soybeans together.
Then toss with your favorite sauce. Pesto works very well. Quick! Easy! Nutritious! Delicious!
