Linguine with Salmon

INGREDIENTS

2 tablespoons extra-virgin olive oil
12 ounces wild salmon fillet, skinless, cubed
3 large garlic cloves, chopped

½ pound mushrooms, sliced

1 large tomato, seeded and diced

1/3 cup dry white wine

3 tablespoons capers, drained

½ pound linguine

1 tablespoon dry dill weed or ¼ cup fresh dill weed

1 tablespoon fresh lemon juice

DIRECTIONS

  1. Cook linguine according to package directions.

  2. Season salmon with salt and pepper.

  3. Heat oil in large skillet over medium-high heat.

  4. Add salmon to skillet and sauté until just cooked through (about 3 minutes).

  5. Use a slotted spoon to transfer salmon to plate.

  6. Add garlic to skillet; sauté 30 seconds.

  7. Add mushrooms; sauté 2 minutes.

  8. Add tomato, wine, and capers; cook until mushrooms are tender (about 5 minutes).

  9. Add cooked linguine, dill, lemon juice, and salmon. Toss.

  10. Season with salt and pepper.
